PEPPER CHICKEN ROAST

PEPPER CHICKEN ROAST

INGREDIENTS:

  • chicken -1kg
  • pepper powder-1  1/2tsp
  • turmeric powder- 1/2 tsp
  • lemon juice- 1 1/2 tsp
  • onions chopped- 4 nos
  • ginger garlic paste- 3 tbsp
  • green chillies,slit length wise  - 3 to 4
  • whole black pepper - 3tbsp
  • garam masala powder- 2 tsp
  • fennel seeds,powdered- 1/2 tsp
  •  curd/yogurt- 1/4 cup
  • Few curry leaves
  • oil-4 tbsp
  • salt to  taste

PREPARATION:

marinate the chicken pieces with the salt ,pepper powder,turmeric powder,curd and lemon juice.keep it aside for 30 minutes.
crush the whole black pepper and keep it aside(coarsely crushed).
In a wok/kadai heat oil,add the chopped onions,curry leaves and saute till onions are brown.
 Add ginger garlic paste,green chili paste and saute till it release super aroma.
add garam masala powder ,fennel powder,crushed black pepper powder and saute for few seconds.
add marinated chicken pieces,stir till chicken pieces are well coated with masala do not add water.
lower heat ,cover and cook till chicken is cooked.keep on stirring in between so that the masala don't stick to pan or burns.
if there is any moisture in the vessel,simmer without he lid for the couple of minutes till the the water evaporates and chicken gets to a nice roasted color and consistency with the thick peppery gravy coating it.
Pepper chicken roast is ready !!!!serve hot.....
